Abstract The production of the amino polysaccharide (chitosan) from crustacean sources has faced many hindrances due to environmental, seasonal and noneconomic issues. On other hand, mycogenic chitosan advantages that make it suitable for medical nutritional applications over non-mycological counterparts.
